The story of El Eden began four years ago in a region where coffee is a relatively new pursuit. Tucked away at the end of a valley, on the cusp of the frontier lands leading to Ecuador, this area is more than just a location; it's a canvas for agricultural innovation and development. Here, amidst this unassuming landscape, lies the potential for transformation, spearheaded by our commitment to nurturing local farmers.

El Eden's unique process begins with an initial fermentation stage, where freshly harvested coffee cherries are enclosed in sealed sacks, a technique diverging from the usual practices of the region. This initial step is crucial, marking the start of a journey that culminates in a coffee experience unlike any other.

The primary challenge in this venture is the pursuit of consistency in processing methods and broadening the understanding of what defines well-processed coffee. Consistent hard work in the region has already begun to yield results, with noticeable improvements in quality and the promise of even more refined lots in the future.

The El Eden Process

This journey of transformation for each bean begins immediately after harvest. A meticulous flotation process cleanses the debris and separates the floaters (low-density fruits). This is followed by the first fermentation stage, where the coffee cherries are placed in plastic bags for approximately 24-36 hours. Next, the coffee fruit undergoes mechanical de-pulping, leading to a second fermentation in tanks for an additional 24-36 hours, the duration of which is guided by the ambient temperature. The final step involves washing the seeds and drying them until the moisture content reaches the optimal 9–11%.
